Paleo Pancake/”White” Bread
This is one of our favorite recipes. It can be used as pancakes or as bread for sandwiches or burgers. I make them in bulk and freeze them in twos in ziplock bags or in the meal prep containers.
Optional add-ins for pancakes: 1/4 Enjoy Life Semi-sweet Morsels, 1/4 fresh blueberries, 1/4 chopped banana, etc.
An item that I make in bulk and freeze as individual servings. This can be used as a chili topping or eaten as an entree in a bowl.
Sausage and Peppers
This is one that doesn’t need to be cooked in bulk, meal-prep style. It only takes 15-20 minutes of prep and cook time. It can be served as is or atop a bed of fresh greens.
Pot Roast and Veggies
This pot roast is argueably the tenderest, most tasteful pot roast ever. We have never really been “into” beef pot roast so this one was a really welcome surprise. It gives us another way to get our beef portion besides burger patties, chilis, or spaghetti. For added variety, change up the veggie choices.
Unstuffed Cabbage Roll Soup
An excellent choice to cook in bulk and freeze individual servings or feed the clan as a healthy choice.
Chicken Taco Soup
This one is pretty cool. Don’t let the can of coconut milk fend you off, it does not add any flavor, it makes the soup ‘creamy’ without the unhealthy Cream. We use the InstaPot version to get a super quick meal. It’s perfect for when you forget to defrost your chicken prior to beginning lunch/dinner. Mmmmm!!!
Taco Seasoning Blend
If keeping all of your ingredients healthy and additive free is important, then give this Taco Seasoning Blend a try. Use it on your ground beef, pork, chicken, or turkey. It is completely versatile and works for everything from traditional tacos or salad to taco stuffed baked sweet potatoes.
